In the radio 4 programme The Spark, Tim Spector explains how our gut microbes can explain a lot about our immune systems and is possibly the single most factor in our health. He explains that processed food actually make you hungry and calories have distracted us form the quality of food. Our focus has been animal welfare, then planet welfare, we now also need to move to microbe welfare. We are unique in our food requirements, even though we share 99% genes we only share 25% gut microbes. He talks about fermented foods being key to our diet.
